I am making this salad for our camping trip tomorrow to bring along and thought I would share!  Am using up some of the items in the fridge at the same time (corn on the cob, peppers, leftover grilled chicken etc.)

Just like their name these are a mouthful...so yummy!  One thing I love about egg-free baking is that you can lick the spoon from the batter!

This is a great way to sneak some beets into your child's diet.  I actually wasn't very sneaky about it however...I am trying to encourage my daughter to eat a wider variety of foods and so we washed the beets together (although she would only touch them with encouragement!) and then we wrapped them in foil and roasted them in a 400 degree oven for an hour until tender.  Hopefully she will enjoy these cupcakes (she will try one tomorrow) and perhaps be convinced that even beets can be delicious!  I just had one and they're pretty yummy!

I have tried many recipes for sugar cookies...looking for something that can be rolled out for cut-out shape cookies.  This recipe is my favourite yet!  I used coconut sugar as I was out of white and I am wondering if that is what made these so fluffy and delicious!

This is great to make with the leftover turkey from Thanksgiving.  With a child with milk, egg and nut allergies, we don't eat casseroles very often but this was delicious!

It is a challenge to find granola that does not contain nuts or traces of nuts.  This recipe is easy and delicious!  I love to eat granola with chopped fresh apple and allergy-safe yogurt or rice milk.  Yum!

These are soooo good, so filling and out of this world!  Makes 24 LARGE cookies and they are perfect for freezing. i will take out 4 for the weekend so that everyone can have a treat.  Thanks Planet Organic for sharing this great recipe!

 

**Allergy Note: I have found it difficult to find seeds and coconut that do not say -traces of nuts or peanuts in the ingredient labels.  Try health food stores and organic varieties.  I use only pumpkin seeds when I make these and add more coconut and also dried cranberries to beef up the dry ingredients since I can't often find the other seeds. I used hemp seeds in my last batch!  Use what you can find and remember, if in doubt, call the company for information about allergy safety.

Thank you, thank you, thank you! to Planet Organic for sharing this delicious recipe!  I love these cookies in the store and I love that I can make them at home, with allergy-safe ingredients for my family!  These are AMAZING!!!!  ****PLEASE NOTE:  IT IS VERY DIFFICULT TO FIND NUT-FREE SEEDS...BE VERY CAREFUL ABOUT CHOOSING SEEDS THAT ARE NUT-FREE AND IF IN DOUBT CONTACT THE MANUFACTURER TO BE SURE!***

I have found nut-free pumpkin seeds, hemp seeds which are a bit too fine for my liking and sunflower seeds on occasion but it is very difficult.  Today I am making these cookies without any seeds as I don't have any so I just used extra coconut and added some craisins as well...you can play around and use what you have on hand!  That's why this is such a great recipe!

If you are not a fan of food colouring....BACK AWAY FROM THESE CUPCAKES!!!  These are so awesome that I am as excited as my kids that they actually turned out! i thought for sure they would be blobs of brown when the colours mixed together but they are BRILLIANT!!!

These are so good!  You HAVE to use a non-stick pan which I learned the hard way! NOTE: This recipe is only SOY FREE if you use rice milk rather than SOY.
